Connecting your drone back to DJI Fly App will reset your DJI FPV Drone to default.

As long as you fly without smartphone, it doesn't need to get reapplied.

Can you still use the fancy home point crosshairs function, the pause button, return to home, auto land, the famous pause button and get all telemetry without the fly app? Is there any actual use to the app?

Everything works without the app, it's useless other than for showing a spectator the video feed and doing updates/getting logs.

You can.
The need for fly app is only if you want to update firmware or share as 2nd screen.
