I keep hearing of these oscillations during flight but I can't find any explanations on the subject. What's up with this? Thanks!

Oscillations can be caused by many many things, props, or PID's and filters for instance, just to name a couple possible causes. They can be physically introduced (vibrations affecting the FC/BF in flight) as well as electronically/logically (PID's causing it), there is no easy answer to your question. Perhaps start the learning process using google university...
